Recipes

Bananas Foster Bread Pudding

Grease 9x9-inch baking pan with the butter; set aside. Whisk 5 large eggs, 1 cup packed light brown sugar, 4 tsp. Bananas Foster Seasoning, 1 tsp. vanilla extract and 2 tbsp. dark rum (optional) in large mixing bowl until very smooth. Stir in 2 1/2 cups half-and-half. Cut 12 oz. French bread loaf into 1/2-inch cubes (stale bread works best). Stir bread into egg mixture. Cover and refrigerate 2 hours, stirring occasionally. Preheat oven to 325°F. Pour mixture into prepared pan. Bake 1 hour or until pudding is set in the center. Meanwhile, for the sauce, bring 1 cup half-and-half to simmer in medium saucepan. Remove from heat; set aside. Whisk 1/4 cup sugar and 3 large egg yolks in medium bowl until well blended. Gradually add warm half-and-half mixture to egg mixture, whisking constantly. Return mixture to saucepan. Cook on medium-low heat, stirring constantly until thickened, about 5 minutes. (Do not boil; this will cause the sauce to separate.) Strain sauce through a fine mesh sieve. Stir in 1 tbsp. dark rum (optional) and 2 tsp. Seasoning. Serve Bread Pudding warm with sauce drizzled over top. Garnish with whipped cream and a sprinkle of additional seasoning, if desired.

Bananas Foster Pralines

Mix 1 1/2 cups sugar, 1 cup light brown sugar, 1/2 cup whole milk, 6 tbsp. butter, and 1/4 tsp. salt in a large saucepan. Bring to boil, stirring constantly until mixture has reached 238 to 240°F. Remove from heat. Add 1 1/2 cup chopped pecans, 4 tsp. Bananas Foster Seasoning and 1 tsp. vanilla extract, stirring until mixture is slightly thickened. Quickly spoon praline mixture onto parchment paper-lined sheet pans using a 1 tbsp. scoop. Allow to harden completely. Store in air-tight container. Makes about 32 pralines.
