Easy Filipino BBQ Pork Skewers
Mix 1/4 cup Filipino banana sauce (or tomato ketchup), 1 tbsp. Filipino-style soy sauce (or Chinese soy sauce), 1 tbsp. brown sugar and 2 tsp. Filipino BBQ Seasoning in small bowl. Set aside. Place 1 pork tenderloin (about 1 1/4 lb.) cut into 1-inch chunks, 1 tbsp. oil and 4 tsp. Filipino BBQ Seasoning in resealable plastic bag; turn to coat well. Massage pork for 2 to 3 minutes. Remove pork from bag and thread onto skewers*. Grill skewers over medium-high heat 4 minutes per side or until internal temperature reaches 145°F, basting with banana sauce mixture halfway through grilling. Let stand 5 minutes before serving.
*If using wooden or bamboo skewers, be sure to soak in water at least 15 minutes before cooking.
Filipino BBQ-Inspired Mushroom Tacos
Mix 2 tbsp. brown sugar, 1 tbsp. vegetable oil, 1 tbsp. Filipino-style soy sauce and 2 tsp. Filipino BBQ Seasoning in large resealable plastic bag. Add 4 large portabella mushroom caps; turn to coat. Marinate 10 minutes. Meanwhile, mix 1/4 cup Filipino banana sauce (or tomato ketchup), 1 tbsp. Filipino-style soy sauce, 1 tbsp. brown sugar and 2 tsp. Filipino BBQ Seasoning in small bowl. Set aside. Grill mushrooms over high heat until tender and lightly charred, basting with any remaining marinade. Slice mushrooms into thin strips. Place mushrooms, 2 tsp. Filipino BBQ Seasoning and any juices from cutting board in bowl; mix until blended. To serve, spread banana sauce mixture on warmed tortillas. Fill with mushrooms and add desired toppings, such as chopped green onions or pickled onions, if desired.
