Glazed Strawberry Lemonade Pound Cake
Preheat oven to 325°F. Mix 2 cups flour, 1 tsp. baking powder and 1/4 tsp. salt in medium bowl; set aside. Beat 1 cup (2 sticks) softened butter, 1 1/4 cups sugar and 1 tbsp. Strawberry Lemonade Sugar in large bowl with electric mixer on medium speed 5 minutes or until light and fluffy. Add 4 large eggs, 1 at a time, mixing after each addition just until blended. Stir in vanilla. Gradually add flour mixture, mixing just until well blended and smooth. Pour batter into greased and floured 9x5x3-inch loaf pan. Bake 70 to 75 minutes or until toothpick inserted in center comes out clean. Cool on wire rack. Meanwhile, for the glaze, mix 1 1/2 cups confectioners' sugar, 2 tbsp. water and 1/2 tsp. vanilla extract in medium bowl until smooth. (Add up to 3 tsp. additional water, as needed, to reach desired consistency.) Drizzle glaze over cooled pound cake and sprinkle immediately with Strawberry Lemonade Sugar. Let stand until glaze is set before slicing and serving.
Strawberry Lemonade Vodka Spritzer
Mix 1/3 cup water and 1/3 cup granulated sugar in small saucepan on medium heat. Bring to boil. Cook and stir 2 to 3 minutes until sugar is dissolved and mixture is slightly thickened. Stir in 2 tbsp. Strawberry Lemonade Sugar until dissolved. Cool completely. Place 1 tbsp. Strawberry Lemonade Syrup on small plate. Place 1 tbsp. Strawberry Lemonade Sugar on separate small plate. Dip rims of 4 (10-ounce) glasses into syrup then in Sugar to coat. Fill glasses halfway with ice. Place remaining syrup, 1/2 cup vodka and 1/2 cup ice in cocktail shaker. Shake vigorously until well mixed and chilled. Strain into prepared glasses. Top each glass with plain seltzer water. Serve immediately.
For a mocktail spritzer, swap in lemon-lime soda in place of the vodka and seltzer water, stirring gently to mix, rather than shaking.
Stir into cream cheese for a quick dessert dip.
Sprinkle on ice cream, frosted cupcakes and cakes.
Stir into fresh fruit salad.
