Recipes
Spicy Cheese Quesadilla
Prepare masa dough using 1 cup instant corn masa flour, mixing as directed on package. Shape dough into 1-inch balls. Flatten each ball into a tortilla using a press or rolling by hand between 2 sheets of parchment paper. Heat 2 tbsp. vegetable oil on a comal or large skillet over medium-high heat. Working in batches place one tortilla on comal. Cook 1 minute. Flip tortilla. Spread 2 tbsp. shredded Oaxaca cheese on one half of the tortilla. Sprinkle with 1/2 tsp. Cholula Seasoning. Fold over other half of tortilla to make a half moon shape. Flip the quesadilla again, cooking just until golden brown and cheese is melty. Serve warm with Cholula Hot Sauce, salsa, pico de gallo and shredded lettuce, if desired. Makes about 8 quesadillas.
Spicy Grilled Chicken Tacos
Mix 1/4 cup oil, 2 tbsp. lime juice, 1 tbsp. Cholula Seasoning and 1/2 tsp. salt in small bowl until well blended. Reserve 2 tbsp. of marinade mixture; set aside. Place remaining marinade and 1 1/2 pounds boneless skinless chicken thighs in large resealable plastic bag; turn to coat well. Refrigerate at least 30 minutes. Meanwhile, mix 1/2 cup sour cream and 2 tsp. Seasoning in small bowl until well blended. Cover and refrigerate until ready to serve. Remove chicken from marinade, discarding any remaining marinade. Grill chicken over medium-high heat 6 to 8 minutes per side or until cooked through, basting with reserved marinade. Thinly slice chicken; toss with 2 tsp. of the Seasoning. Serve chicken in warm tortillas with spicy sour cream and desired toppings, such as chopped white onions and cilantro.
