Recipes

Buffalo Mac and Cheese

Preheat oven to 400°F. Cook 4 oz. elbow macaroni or medium shells in large saucepan as directed on package for al dente pasta. Drain well. Melt 2 tbsp. butter in same saucepan on medium heat. Stir in 3 Tbsp. flour and 2 tbsp. Frank’s Cheesy Buffalo Seasoning with wire whisk until smooth. Gradually stir in 1 1/2 cups whole milk. Bring to a simmer. Cook 3 minutes, stirring constantly, or until sauce starts to thicken. Remove from heat. Stir in 2 cups shredded Cheddar cheese until melted and smooth. Gently stir in macaroni to coat. Pour into 8x8-inch baking dish sprayed with no stick cooking spray. Mix 1/3 cup panko, 1 tbsp. melted butter, and 1 tsp. Seasoning in small bowl. Sprinkle mixture evenly over top of macaroni and cheese. Bake 10 to 15 minutes or until bubbly and golden brown on top. Let stand 5 minutes before serving. Makes about 6 servings.

 

Cheesy Buffalo Chicken Tater Tot Casserole 

Preheat oven to 375°F. Place 1/2 of a 28 oz. bag of frozen tater tots (about 3 1/2 cups) in an even layer on the bottom of an 8x8-inch baking dish sprayed with no stick cooking spray. Set aside. Mix 2 cups shredded cooked chicken, 8 oz. softened cream cheese, 1/2 cup ranch dressing, 1/2 cup crumbled cooked bacon, and 3 tbsp. Frank’s Cheesy Buffalo Seasoning in a large bowl. Spread evenly over tater tots. Place remaining tater tots in an even layer on top of the chicken mixture. Cover tightly with foil. Bake 50 minutes. Remove foil. Sprinkle with 1 cup shredded Cheddar cheese. Bake 5 minutes longer or until cheese is melted.  Sprinkle with chopped green onions and additional Seasoning, if desired. Makes about 10 servings.
