Dilly Potato & Bacon Salad
Bring 3 lbs. halved baby Yukon gold potatoes to boil in lightly salted water in large saucepan. Cook 15 minutes or until potatoes are fork tender. Drain well. Cool slightly. Mix 3 chopped hard boiled eggs, 2/3 cup mayonnaise, 2/3 cup sour cream and 2 tbsp. Garlicky Dill Pickle Seasoning in large bowl. Add potatoes and 8 slices cooked and crumbled bacon; toss gently to coat. Serve immediately or refrigerate until ready to serve.
Pickle Fried Chicken
Place 1 ½ lbs. boneless skinless chicken thighs in large bowl. Sprinkle with 4 tsp. Garlicky Dill Pickle Seasoning, tossing to coat on all sides. Cover. Refrigerate at least 4 hours or overnight for best flavor. Fill large deep skillet (or deep fryer) with oil, filling no more than 1/3 full. Heat oil to 325°F on medium-high heat. Meanwhile, mix 1 cup flour, 2 tsp. Seasoning, and ½ tsp. salt until well blended. Whisk ½ cup half-and-half and 1 large egg in separate bowl. Working in batches, coat chicken in flour. Dip in egg mixture to coat, shaking off any excess, then coat in flour again. Carefully place chicken in hot oil. Fry 15 to 20 minutes or until golden brown and cooked through (internal temperature of 165°F). Drain on paper towels. Keep warm or serve immediately.
